A must-have for weeknight dinners


It's pretty safe to say that of all the Foodie Family members, I'm one of the least likely you'll find cooking in the kitchen. That's not to say that I can't cook, or that I don't enjoy it from time-to-time, but as a new mom of a 4-month old, I'm looking for quick meals that don't require a lot of fancy ingredients, but are tasty none-the-less. As such, I thought I'd take a moment to highlight one of my favorite kitchen staples (which Steve introduced to me)...Fond de Poulet Gold from http://www.morethangourmet.com/.

This stuff is truly worth it's weight in gold and definitely earns a permanent place in the fridge. And yes - it's worth the effort to order it online!

It's super handy when you want to make a quick sauce or pep up a week-night dinner...case in point....here's a great, super fast, weeknight dinner that tastes great too.....


Super Fast and Tasty Weeknight Chicken

serves 2

cook time: under 20 min.


Ingredients

2 chicken breast halves

salt and pepper to taste

1 small lemon

2 Tbs. vegetable or olive oil

4 Tbs. butter

Fond de Poulet Gold


Place the chicken breast halves between plastic wrap and pound until thin (the thinner you make them, the faster they will cook). Season both sides of chicken with salt and pepper.

Heat a large nonstick skillet over medium/medium-high heat with 2 Tbs oil and 2 Tbs butter.

When the butter is melted, add the chicken. Cook the chicken until nicely browned and then turn over. Continue cooking until the chicken is done (internal temp of at least 150).

Turn the heat down. Add 2 Tbs butter, a large spoonful of Fond de Poulet Gold, and the juice from one small lemon to the pan, and stir to mix (should make a thick sauce). Turn the chicken to coat in sauce, remove from heat, serve chicken, spooning any extra sauce over top.


We like to serve the chicken with buttered egg noodles tossed with Parmesan cheese and sauteed green beans. Yum!
